Healthy Baked Chicken Sliders (Print Version)

Baked ground chicken patties with fresh veggies and tangy yogurt sauce on whole wheat buns.

# What You’ll Need:

→ Chicken Patties

01 - 1.1 lb ground chicken breast
02 - 1 small onion, finely chopped
03 - 1 clove garlic, minced
04 - 1 egg, lightly beaten
05 - ½ cup whole wheat breadcrumbs
06 - 1 tbsp Dijon mustard
07 - 1 tbsp fresh parsley, chopped
08 - ½ tsp smoked paprika
09 - ½ tsp salt
10 - ¼ tsp black pepper

→ Yogurt Sauce

11 - ½ cup low-fat Greek yogurt
12 - 1 tbsp lemon juice
13 - 1 tbsp fresh dill or parsley, chopped
14 - ½ tsp garlic powder
15 - Salt and pepper to taste

→ Assembly

16 - 8 whole wheat slider buns
17 - 1 small tomato, sliced
18 - 1 small cucumber, sliced
19 - 2 oz baby spinach or lettuce leaves
20 - 8 thin slices red onion

# How to Make It:

01 - Set oven to 400°F and line a baking sheet with parchment paper.
02 - Combine ground chicken, onion, garlic, egg, breadcrumbs, mustard, parsley, smoked paprika, salt, and black pepper in a large bowl. Mix until just combined.
03 - Divide mixture into 8 equal portions and form into small patties.
04 - Place patties on the baking sheet and bake for 18 to 20 minutes, flipping halfway through, until golden and cooked internally to 165°F.
05 - Whisk together Greek yogurt, lemon juice, dill or parsley, garlic powder, salt, and pepper in a small bowl.
06 - Optionally toast slider buns lightly before assembly.
07 - Spread yogurt sauce on bottom half of buns, add a patty, then top with tomato, cucumber, spinach or lettuce, and red onion. Add more sauce if desired and cover with top bun.
08 - Serve sliders immediately while warm.
